Pacamara Natural Process Microlot 2022 lot from Nicaragua
CUP PROFILE:
Fragrance: Mango, papaya, cherry, red grapes, and more!
Aroma: Concord grapes, mango, developed, brown sugar concentrate, papaya
Warm: Juicy, Yirgacheffe-like, awesome, espresso would be insane, cherry, malic, sweet, Ethiopian-like!
Cool: Yirgacheffe-like, juicy smooth, Concord grapes, steak, lilac, floral, body, sugary, apples, sweet, SO NICE
Brix Breaker?: Each coffee cherry is measured with a refractometer which tells the farmers when the ideal time to harvest is. It is said that there is a correlation between a high brix reading and a sweeter cup profile.
Notes: This coffee gets noticeably better as it rest on both pour over and espresso. We find that on days 10-14 seems to bring out a lot of sweetness. These are giant beans. Overall there is a ton going on with this cup. it reminds me of life savers candy.

Cool: Apple, an orange lifesaver melted in your mouth, grilled grapefruit with sugar, apple candy, candied apricot, WOW
