Taste:
A delicate and lively cup, this coffee unfolds with mild yet expressive tropical notes. At first sip, bright red fruits and a whisper of rose emerge, carried by a smooth, light body. The lingering finish leans savory with a subtle sweetness, while deeper tropical tones of guava, mango, and pineapple add dimension. As it cools, herbal nuances surface, alongside a playful, melted-gummy-bear softness. Its not a really high acidic coffee tends to me for savory.
This cup reveals a chuggable, effervescent quality—like lemon-lime spritz over stone fruit and peach cobbler. The wet aroma hints at buttery honeysuckle, setting the stage for a vibrant yet dissolving experience that echoes the complexity of Mejorado.
Green was Vacuum sealed and air flown in.

I really liked this from my Cafelat Robot by itself. I went slightly coarser than usual when doing a batch brew the second time as the first go was intense. I had fun making blends with this coffee as it played nicely with other coffee profiles without being overwhelming or having its characteristics getting lost.

We had the Columbia Pink Bourbon Aji 3 weeks after its roast date. It was prepared using a Baratza Encore 16 grind size then as a pour over in a Clever Coffee Dripper with a 4:30 min brew time. Aromas across the board were awesome. Whether the extra week since roast played a role or not is not clear but it’s dry aroma was like chocolate covered orange slices. Wet aroma converted it to a balanced lemon zest with natural grape notes. Its taste was velvety and almost sweet especially as it came to room temperature. This was a coffee that could easily find it’s way into a specialty shop.
