To most of you, Diego Bermudez needs no introduction. Our approach is to get the most origin characteristics out of this bean and have the processing elevate the tasting experience even more. This is a special one and so excited to share this with you!
About the process:
The process of this profile begins with the proper harvesting of coffee cherries at the ideal point of maturation. Then the coffee cherries are disinfected with ozone and are transferred to the cherries fermentation tanks, in which an anaerobic fermentation process is carried out for 72 hours submerged in water.
Next, the coffee is pulped and demucilaged; the mucilage and pulp are taken to the pilot plant to carry out the production of process-specific microorganisms and generate the culture medium that contains the precursors of aromas and flavors produced in fermentation, then this culture medium is added to the fermentation tanks together with pulped coffee, where they remain for 36 hours under pressure to fix the precursors to the coffee beans. Then, a thermal shock process is carried out to fix a greater amount of precursors and seal the coffee for a good drying.
The coffee is then dried in a dehumidifier to remove moisture, preserving the coffee’s delicate notes and preventing over-oxidation of the coffee bean and stopping metabolic processes to prevent over-fermentation

This is a light-Medium roast giving us around a 12-13% weight loss.

Tasting notes are incredibly on point. These were peak 3.5 weeks off roast—the guys at GoodBrothers did an excellent job maximizing the potential of these. Pour over was sweet with a kiss of acidity. Flash cold brew was like Lychee candied caramel. A must if you enjoy hard candies.

I was gifted this 4 oz bag of coffee in my order. It was a pleasant surprise through and through. Depending on your espresso set up, you may or may not get the tasting notes mentioned on the bag. I was able to extract an extremely pleasant sweetness in the cup, reminds me a lot of the sweetness in honey dew. Then as the cup cools, the mild acidity starts to appear, reminds me of peach, as noted on the bag. I am very familiar with the taste of lychee, as it is one of my favorite tropical fruits, and is very easy to come across in my country. The coffee does not remind me of lychee much. But overall, you can expect quite a pleasantly sweet cup with mild acidity from this coffee!

Thin body, subtle peach flavor, more lychee flavor, good as a latte. I had to grind finer for some reason to bring out the flavors and get a better extraction. I could not experiment much because it was only the 4oz bag. All in all, a decent coffee to have fun with. The Gnomes approve!

With a week's rest I engulfed my mouth with this amazing lychee coffee. Instantly the tasting notes hit you like a violin, first with lychee and then a really good floral note. This coffee is just fantastic. I highly recommend.
