The aroma of strawberries will fill the entire room with this one. We have been drinking a lot of co-ferments and maceration coffees this year and this one has been the winner. The strawberry is undeniably dominate with a nice lime and chocolate note that makes a nice pairing.
This coffee was grown by Jairo Arcila at the farm Santa Mónica. This coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage strawberry and wine yeast were added. The cherries were then pulped and placed to dry on raised beds with ripe strawberry placed amongst the coffee until the ideal moisture content was achieved.
This is a Light - Medium roast giving us around a 13.5% weight loss.
*** These beans do appear darker than what they typically would do to the processing. They are dark in color before even roasting them causing the end color to be darker than "normal"

Another great anaerobic fermentation coffee from GB. Strawberry notes are very present. I’m new to this new style of coffee, it’s almost like a different beverage from traditional coffee. I really enjoy this one and appreciate the 4 oz bags which allow you to try different coffees. Highly recommended!

Very chemical taste. I tried it a lot of times with different ratios and temperatures. Tried it as espresso and pourover. No matter what changes I made, this coffee was un-drinkable. On top of that I thought maybe it would be better with milk. It curlded the milk every time. I tried oat, whole milk, and half/half all with the same result.

I vacuum sealed this coffee and put it in the freezer so I would have it when my new df83v came. Got it dialed in yesterday and enjoyed a mocha that was like a chocolate covered strawberry. Sooooo yummy!!!!!

Brent wasn’t kidding when he said it was like a strawberry milkshake. The aroma is amazing. Pulled a shot into some sweetened condensed milk and mmmmmm. Pour over also works well. Next up a larger bag!
