Bright and playful, this cup leads with a strawberry bon bon sweetness and a lively, clarity you would not expect with 60 hours of fermentation. When hot, expect medium acidity and a lingering strawberry finish. As it cools, the profile shifts gently towards a very subtle limey character, keeping things balanced without becoming too wild. The reason we love this coffee is its not too wild! Not funky or boozy. Throughout, the cup stays focused and straightforward, celebrating pure fruit expression! Easy to extract.

This bean was delicious! The strawberry profile is undeniable. Adding milk, especially heavy cream, it tastes very similar to a strawberry Creme Saver. My V60 dial: Using a DF64 with SSP v2 burrs, grind at setting 63. Brew 20g of coffee at a 1:17 ratio with 201°F water. Start with a 60g bloom for 45 seconds, then add 100g to reach 160g. Continue with 60g pours every 10 seconds until you reach a total of 340g. 3:30-3:45 brew time. Enjoy!
