Our Roast Level:
Medium - 13.7% weight loss. Moisture of un-roasted = 11% Whole bean color 66.1 Ground color 105.9 (Lewbrew) higher # is lighter in color. Our goal is to bring as much sweetness and character of the bean forward without over roasting the flavors out of the bean. We like to drop this bean around 15.5 degrees F after first crack and 1 min 20 sec. into development.
