CUP PROFILE: Honeysuckle, Jasmine florals, Pineapple, lemon zing.
Same coffee as Aviary#010
Taste:
Bright and playful as a handful of pink Starbursts. This coffee bursts with cotton candy sweetness, jasmine florals, and a lively lemon zing that lingers on the finish. Brewed hot, it delivers a sparkling, well-separated flavor profile—like a sunlit garden in bloom, where honeysuckle and orange creamsicle swirl together in perfect harmony.
As it cools, the experience deepens. Succulent stone fruit notes emerge, dripping with lush ripeness, while the aroma remains plump and floral, inviting sip after sip. Each brew is a balanced dance of citrus brightness and creamy sweetness, making it a cup that improves as you savor it.

Absolutely adore this washed gesha bean. I vacuum seal the good beans like this one and it's still so refreshing and juicy and has that well known gesha tongue dance.

Very sweet and juicy. Good texture. All around great gesha. Cannot go wrong

Now this washed Gesha has made me rethink the potential taste profile of the washed process. While the Gesha varietal likely had a lot to do with it, the dry aroma definitely presented with a milk chocolate character I’m used to smelling with a natural process. Its brewed aroma (pour over) was embracing and filled with cherry blossom. It also tasted like a natural with rich, silky citrus but not like a co-ferment. This washed Gesha was so adventurous it presented as a natural to me, but was so clean it preserved the washed character. Super fun, this was an amazing and lucky roaster’s choice!
