Ethiopia Kayon Mountain – Organic Natural Guji

Blueberry • Strawberries & Cream • Tropical Fruit

This organic natural from Kayon Mountain Farm is a wildly expressive Guji loaded with ripe berry sweetness and vibrant fruit character. The aroma is huge and immediately inviting, showing blueberry, strawberry, tropical fruit, and flashes of orange-creamsicle sweetness.

In the cup, juicy strawberry and blueberry lead into layers of jammy red fruit and lively tropicals. A creamy, substantial body gives the coffee an almost strawberries-and-cream character, while touches of grapefruit and a delicate white-wine-like finish keep everything bright and clean.

As it cools, the blueberry becomes even more pronounced, alongside sweet mixed berries and lingering creamy fruit. It has all the rich fruit and body people love in a great natural Ethiopian, but without heavy fermentation or rustic flavors.

Loud, sweet, creamy, honeysuckle and incredibly fruit-forward — a standout organic Ethiopia for anyone chasing big berry notes.

Personal note: This is a light roast. The outside color seems a bit darker due to the natural process but is a very light roast! We find the ground color to be a tad lighter in general than Sey coffees as a reference. 


Our Roast Level:

Light 9.7 % WL (original moisture 9.1%) whole bean color 78.7 and 140.8 ground (Lebrew) Higher number = lighter color. We are dropping this one 19 secs after first crack starts. 

RESTING RECOMMENDATIONS:

6-15 days for pour over. 2-3 weeks on espresso.  For pour over we found some incredible brews early on day 6-11. Then day 12-15 a tad muted then came back again 15+ days. I would want to encourage an early dive in as we had some amazing brews early!
