From Mario: "Culturing is one of the fermentation methods used by fermentists in other foods, in which a starter base rich in microorganisms is used to transform another product. At Fincas La Soledad and La Floresta, we have applied this technique to the fermentation of our coffee through a process known as culturing, where we prepare starter cultures and then mix them with the coffee during fermentation. Additionally, we use mosto —the liquid resulting from previous fermentations—as part of the process to enrich the microbiota and add greater complexity to the coffee’s sensory profile."

Completely blew my mind. In s milk drink it reminded me of a lemon loaf but without the glaze. As a straight shot the flavors were spot on as advertised. Not a regular buy, for sure, but I loved every gram.

Fantastic! This is a really special offering for lovers of lemon. On first sip, I get a crisp Meyer lemon which that quickly shifts to a pronounced lemon verbena before hitting an aftertaste of honey and general florals. Much like its namesake, this has a slightly stronger acidity than other offerings from the same farm (cotton candy, orange bourbon). I reduced my water from 203 to 200 and that was perfect to mellow out the acidity a little bit. 10/10 would buy this again!

The aroma—yellow Starburst, straight up. Honeysuckle. Fresh squeezed lemon. It’s bright, but also soft and sweet at the same time.
First sip—boom. Lemonade.
Clean, juicy, refreshing. Then it settles into this honey sweetness with that floral honeysuckle hanging in the background.
And here’s the thing—it’s not sharp or aggressive. It’s smooth. Balanced. Super easy to drink.
This is the kind of coffee you don’t overthink. You just keep going back for another sip.
