Resting Recommendations:

7-14 days from the roast date for espresso and 7 days for drip.  We dove in early (12 hours old) on espresso and drip and were still very pleased but will improved with some age.  Dont be afraid to dive in early!

Roast Level:

Medium - 13.5% weight loss. Moisture 10.1% Whole bean color 62.9 Ground color 95 (Lewbrew) higher # is lighter in color.  Our goal is to bring as much sweetness and character of the bean forward without over roasting the flavors out of the bean. We like to drop this bean around 21.1 degrees F after first crack.
