MEXICAN FTO ORGANIC CHIAPAS

Tasting Notes: Milk Chocolate • Red Cherry • Soft Citrus • Clove

Smooth, sweet, and easy-drinking, this Fair Trade Organic coffee from Chiapas leans heavily into chocolate with a subtle fruit-driven lift. Expect creamy milk chocolate and cocoa up front, followed by notes of red cherry and cooked grape.

A gentle, tangy citrus acidity adds just enough brightness—somewhere between mandarin and a soft lemon-lime character—without taking the coffee away from its round, chocolate-forward profile. As it cools, the cup stays smooth and balanced, with lingering chocolate, red fruit, and a subtle clove-like spice.

The body is silky and slightly fluffy, with a clean, lingering chocolate finish. Its balanced sweetness, chocolate-forward character, and mild fruitiness make this an excellent choice for both espresso and drip brewing.

Cup Profile: Smooth • Chocolate-Forward • Mildly Fruity • Balanced • Low-to-Moderate Acidity

FESICH Cooperative
FESICH brings together hundreds of coffee-growing families spread across the rugged highlands of Chiapas, where coffee production has been woven into daily life for generations. Farms are typically small, family-managed plots tucked into steep mountainsides, with producers relying on a deep understanding of their land, local climate, and harvest timing to consistently produce quality coffee.

The region's combination of elevation, cool evenings, and a long ripening season allows coffee cherries to develop slowly, building the sweetness and structure that have made Chiapas one of Mexico's most respected coffee origins. Throughout harvest, producers selectively pick ripe cherries and deliver them to local collection points, where the coffee begins its journey through washing, drying, and preparation for export.
