Peach Sunset
Colombia Huila 1600 Meters with 60 Hour Fermentation Caturra Washed but taste like a co-ferment! This is a Caturra washed
CUP PROFILE: Peach Rings • Peach Cobbler • Long Linger
This coffee is all about turning up the peach. From the first grind, you're hit with the unmistakable aroma of sticky peach rings. Brewed hot, it opens with a sweet bite: a juicy wave of peach, stone fruits like cantaloupe and tangerine, followed by a clean, lingering finish kissed with some florals.
As it cools, the cup settles into peach candy and cobbler filling—comforting, playful, and complex. Every sip feels like a sunlit walk through an orchard at golden hour. This is our 4th coffee on our menu from Mario Ferando for good reason! Its definitely expressive but still has a clean quality for this type of coffee!
Resting recommendation: One- two weeks on drip 2 weeks on espresso
We did drink this 18 hours from roast on espresso for fun and filter and was shockingly very happy. It did improve even more at 10-15 days.
Espresso shots seemed best for us 2-1 ratio in 20-25 secs.

We tried some ultra light roasting and got Dill pickle notes. This shocked us! if you go too light and get dill.. develop it longer. We drop about 45 sec after first crack starts. Dill picked was 30 sec.
